Gastro-cultural experience where the guest is taught how to prepare Chicken Pibil traditionally; the way Mayan-Yucatecan people have been preparing it for generations.
A chef from the Hacienda Uxmal will teach you how to prepare Chicken Pibil, how to make tortillas by hand and how to prepare the habanero chile sauce that accompanies this traditional dish in Yucatecan cuisine, by following a recipe that has been passed down through generations.
Very few places around the world use the cooking methods you will use, as it is prepared by cooking the chicken inside a “pib” (in Maya), a hole in the ground used as an oven for cooking a variety of true Yucatecan dishes including the one you will learn to make. Cooking inside a pib, although it might seem ancestral, is a cooking method still used today in the majority of towns and rural Mayan communities, and is the true way of cooking many dishes you might have tried.
As you go through the process of learning real Yucatecan cooking, you’ll also learn about the Mayan culture and the Mayan’s, who still exist, way of life. You’ll hear a few of the countless legends and common anecdotes along with some words in the Mayan language.
Accompanying the Chicken Pibil you previously created, will be other traditional dishes including: “sikil pak” tacos, chaya soup, and candied papaya as a dessert along with lima or sour orange water.
This is a true Mayan-Yucatecan gastronomical experience.
