Classic Mayan, Yucatecan & Mexican Breakfast Dishes
A Yucatán classic, this dish originated in the town of Motul. Crispy corn tortillas topped with sunnyside- up eggs from our chickens, black beans, a rich tomato sauce, ham, peas, plantains, and queso Oaxaca.
A specialty from Valladolid, Yucatán, this dish features scrambled eggs sourced from our farm mixed with longaniza; a type of sausage made in the colonial city of Valladolid—a simple but fantastic blend of tradition and regional flavors.
This hearty dish combines scrambled eggs from our own farm with shredded beef, sautéed with tomatoes, onions, and spices. This classic dish offers a bold and rustic flavor.

Yucatán street food staples, Panuchos are refried corn tortillas stuffed with black beans, while Salbutes are fried and puffed tortillas. Both can be topped with cochinita pibil, relleno negro, or hardboiled egg, as well as chicken which is served with lettuce, pickled onions, avocado, and tomato.
Your choice of handmade corn or flour tortillas filled with your choice of Oaxaca cheese and Flor de Calabaza (squash blossom), Huitlacoche (Mexican corn truffle), shredded chicken, beef or only cheese. Folded and lightly grilled until perfectly warm and melty. Served with salsa and crema.
